Our Spring Break camping trip had
me dusting off de
ssert recipes that are not only quick and easy but are not terribly fussy about
cooking methods. They also need to be able to assemble without mixers, blenders or food processors. Yes, is a special collection of desserts.
After our Near Year’s camping trip, I posted Happy Camper Cherry Cobbler. Word got out about the cobbler, and I made two of them on the Spring Break trip. There were three other nights, though, and one of them had me assembling a pile of these marshmallow filled dessert quesadillas.
They are so easy to put together, and you can even enlist the help of the kids (or those acting like kids) in your group for an assembly line.
You can customize every quesadilla for different tastes in your
group. My daughter has a strong dislike for peanut butter and bananas so she gets hers with just chocolate and marshmallows. The rest of us, though, enjoy them loaded up with peanut butter, banana slices, chocolate chips, mini marshmallows.
Fair warning … the gooey melted marshmallows hold this epic dessert’s contents together but it is up to you to keep it in the tortilla. Govern yourself accordingly.
This camping favorite can be dangerous for your clothing and shoes. 
Every time I make these, someone ends up with half of their quesadilla contents down the front of their shirt and often their pants too. If the poor victim is standing up, shoelaces are absolutely at risk. I can’t lie …. laughing at each other while eating these is half the fun! Just make sure you have a tub of wet wipes or a hand washing sink available because regular napkins will just stick to the sticky stuff left all over your hands and face 🙂
And a word about cooking this delicacy…. you can cook them in a grill pan over an open fire, directly on the grates of your grill (use nonstick spray first, I learned that one the hard way), or in a frying pan. Whichever way you select, just keep the heat in the medium to low range so everything melts without the tortilla getting too crispy.
Ingredients
- 4 large flour tortillas
- 4 medium bananas
- 1 cup creamy peanut butter
- 2 cups milk chocolate chips
- 2 cups mini marshmallows
Instructions
- Cover half of each tortilla with 1/4 cup peanut butter.
- Slice banana onto peanut butter, placing each one directly into the peanut butter (not overlapping)
- Sprinkle 1/2 cup (or less) chocolate chips onto peanut butter and bananas, placing each chip directly into the peanut butter (not sitting on banana slices)
- Sprinkle 1/2 cup mini marshmallows onto the peanut butter half of the tortilla
- Fold tortilla over to form a quesadilla
- Cook over medium low heat in a frying pan, directly on the grill or in a grill pan over a campfire. Cook slowly for 5-7 minutes; quesadilla is done when contents are melted and tortilla is not burned.
