Happy Camper Cherry Cobbler

happy camper cherry cobbler-0260Happy Camper Cobbler is one of the easiest and tastiest dishes that I cook when we are camping.
It has literally had people running from nearby campsites for a serving of its hot-from-the-oven bubbly and sweet goodness.  Nobody expects a homemade dessert on a camping trip and whether you have a camper with an oven, or just a campfire, you can whip up a Happy Camper Cobbler for your brood.

The simplicity of this dish is really what makes it a winner in my book.

It has three ingredients with long shelf lives (so if you don’t use it on the trip the stuff won’t go bad) and there’s no dishes to wash if you use a disposable pan.  I have to confess that using a glass pie plate for these pictures was for photographic purposes only.  Normally this bad boy is cooked in a 9×13 disposable metal pan which gets thrown away once it is emptied of its contents (which usually happens rather promptly).

The directions below are for an oven.  If you plan to use the campfire method for cooking, you’ll need a large cast iron pot with a top.  Cooking time should be extended to about 90 minutes or until bubbly.happy camper cherry cobbler-0253

Camping is no excuse to not have a good-looking serving area for your food.  (Also, I can’t help myself but try to make it look pretty.)  We are fortunate enough to travel with other folks most of the time so there is a decent size group to feed.  Buffet style is the only way to go, and you can make your goodies both portable and pretty with very minimal effort.  Use a cookie sheet or baking pan and cover it in foil, put your plates and napkins on it, add some utensils and you’re ready to go.  I try to keep a small package of fun printed plates, small napkins and decent looking plastic utensils on the camper just in case.  The plates and napkins you see here were from the grocery store across the street from our campground.happy camper cherry cobbler-0268

Ingredients

  • (3) 21 oz cans cherry pie filling (or any other flavor you'd like)
  • 1 box yellow cake mix
  • 1 stick butter

Instructions

  1. Preheat oven to 350 degrees
  2. Dump pie filling into 9x13 pan, spreading it evenly in the pan
  3. Sprinkle entire box of yellow cake mix evenly over the top of the fruit
  4. Slice the stick of butter into 1/2 tablespoon (or a little smaller) pieces and place the butter slices evenly spaced on the top of the cake mix
  5. Cover tightly with foil
  6. Bake 45 minutes or until bubbly and your camper smells like cobbler.

For anyone who will be cooking this in a camper oven, you already know that they are neither precise in temperature nor even in heat distribution.  Not to worry.  This cobbler is not delicate.  I use the 45 minute mark as a guide but, if the camper doesn’t smell like a rich and buttery cobbler, it probably needs a few more minutes in the oven.
