I love s’mores. A lot. S’mores, however, are nearly impossible to serve and enjoy with any amount of dignity…. until now. These brownie bites are not only absolutely adorable but they are a perfect portion of decadence. One brownie bite will give you a “just enough” helping of that perfect combination of graham crackers, chocolate and marshmallow flavors.
My daughter also tells me that the textures are perfect together which, honestly, I have to agree with. The crust has the same kind of crunch you get with a graham cracker on a freshly made-by-the-fireside s’mores. YUM.
I will admit to having a decent amount of fun with these little guys. Since I had the two sizes, my daughter suggested that I add some of the red sparkly gel we were using for other baking projects to the top of the frosting to make it look like a campfire. A brilliant idea! Of course, I can’t think about a campfire without thinking about roasting marshmallows so I made a marshmallow skewer for each of the little brownie bites. So here are my little s’mores brownie bites roasting marshmallows by the tree 🙂 Rest assured they were devoured once I pronounced my picture-taking completed!
A word about the box of brownie mix that you use …. you’ll see in the pictures that I have some larger brownie bites and some smaller. I actually used a 9×13 pan size mix and that made a pan of mini muffins along with 6 regular muffin size brownie bites. You’ll have enough graham cracker mixture with the quantity below either way.
Brownie Bites Ingredients
1 box of your favorite brownie mix (Mine is Ghirardelli Triple Chocolate)
1/2 cup plus 2 Tablespoons graham cracker crumbs
2 Tablespoons plus 1/2 Tablespoon melted butter
3 Tablespoons granulated sugar
Brownie Bites Instructions
Preheat oven to 325 degrees
Grease pan with softened butter
Put a rounded teaspoon of crust mixture in the bottom of each mini muffin cup; press into muffin cup.
Bake at 325 degrees for 6 minutes, remove from oven when lightly golden.
Prepare brownie mix per package directions.
Place 1/2 Tablespoon brownie batter on top of baked crust for mini muffins; 1 Tablespoon for standard size muffins.
Bake at 350 degrees for 12-14 minutes until edges are crisp.
Cool in pan for 15 minutes; remove from pan and cool completely on a wire rack.
Marshmallow Buttercream Frosting Ingredients
1 cup butter, softened
1 small jar marshmallow fluff (6.5 ounces)
1 1/4 cup confectioners sugar
1/2 tsp vanilla extract
Marshmallow Buttercream Frosting Instructions
Using a stand mixer or hand mixer, cream butter until fluffy.
Slowly add in confectioners sugar.
Add vanilla extract.
By hand, fold in the marshmallow fluff and gently stir until completely combined.
Frosting and Assembling
To achieve the “mountain o marshmallow” look I have here, you’ll need some mini marshmallows and a pastry bag with a simple small round tip (I used Wilton #4).
Put the mini marshmallow in the middle of the brownie bite.
Draw a squiggly outline around it.
Repeat this squiggly pattern from the first squiggly of frosting up onto the side of the marshmallow; go all the way around.
Add a third layer of squigglies on top of the marshmallow until it is sufficiently frosted or pretty for your liking.
Sprinkle with the leftover crumb crackers.
Admire the cuteness you’ve created for a brief moment, and then enjoy!
