Fresh Breakfast Salsa got its start during my stay at the Bellagio in Las Vegas for my husband’s 50th birthday. Each morning, my omelette came with a roasted tomato half that was beautifully seasoned. I had no idea that I enjoyed vegetables with my breakfast that much!
So, when we got home from Vegas, I set out to re-create the Bellagio tomatoes. And I did. The unfortunate drawback was the amount of time it took to prep, season and then bake the tomatoes. When I combined the cooking time with my general lack of patience before I’ve had at least a cup of coffee (or two), it became abundantly clear that the Bellagio tomatoes were not going to be making a regular appearance in my kitchen.
How else could I easily incorporate tomatoes into my breakfast without just putting a few slices on my plate? While certainly fast, that doesn’t add a whole lot in the taste department. So, I mixed it up with some avocado and onion (sometimes I’ve used sweet Vidalia onion and other times I’ve used red onion) and then sprinkled on a few turns from my most favorite seasoned salt grinder. Give it a quick stir and let it set while you make your eggs. Easy and delicious!
A word about the seasoned salt grinder. The important thing here is that you season your veggies in a way that you like. My favorite combination is The Fresh Market’s Herbed Sea Salt Blend which has rosemary, thyme and basil in there among other things. If you are watching your sodium intake, you can always use a salt-free seasoning mixture of your choice.
Ingredients
- 1 Roma tomato, washed and chopped
- 1/4 Haas avocado
- 2 T finely chopped onion
- Dried seasoning mix
Instructions
- Chop all three vegetables and place in a small bowl.
- Sprinkle with your dried seasoning mixture.
- Stir and let set for approximately 10 minutes
- Enjoy!
