Guacamole is one of the single most delicious foods made out of vegetables. I do like lots of vegetables but, in my humble opinion, the avocado is among the most spectacular. With a little bit of lemon, cilantro, onion and jalapeno you can turn that avocado into a glorious dip. And since you can make it a couple of days ahead of when you’ll be eating it, you will be able to enjoy your company – and your favorite team on TV – while savoring your veggies.
Guacamole is one of those things that is a little different everywhere you go. Picture yourself walking up to a table of appetizers at a
party. Plain veggies and dip? Meh. So, well, ordinary. Carrots taste the same at everyone’s house. But that dish of homemade guacamole…. now that’s something you simply have to try. And with all fresh ingredients, you don’t need to add a whole lot to it for it to taste divine.
This recipe is my favorite guacamole. After years of fooling around with different combinations of seasonings, peppers and even citrus fruits, this is where I’ve landed. I love that I can do the whole thing in my food processor, and can even make it a couple of days in advance. We took this on our new year’s camping trip and ate it on our third night. The flavors had all combined and it was heavenly. Even the food processor thought it was good and smiled at me 🙂
