easy game day guacamole-0511easy game day guacamole-0431Guacamole is one of the single most delicious foods made out of vegetables.  I do like lots of vegetables but, in my humble opinion, the avocado is among the most spectacular.  With a little bit of lemon, cilantro, onion and jalapeno you can turn that avocado into a glorious dip.   And since you can make it a couple of days ahead of when you’ll be eating it, you will be able to enjoy your company – and your favorite team on TV – while savoring your veggies.

Guacamole is one of those things that is a little different everywhere you go.  Picture yourself walking up to a table of appetizers at a
party.  Plain veggies and dip?  Meh.  So, well, ordinary.  Carrots taste the same at everyone’s house.  But that dish of homemade guacamole…. now that’s something you simply have to try.   And with all fresh ingredients, you don’t need to add a whole lot to it for it to taste divine.

This recipe is my favorite guacamole.  After years of fooling around easy game day guacamole-0425with different combinations of seasonings, peppers and even citrus fruits, this is where I’ve landed.  I love that I can do the whole thing in my food processor, and can even make it a couple of days in advance.  We took this on our new year’s camping trip and ate it on our third night.  The flavors had all combined and it was heavenly.  Even the food processor thought it was good and smiled at me 🙂

Ingredients

  • 1/2 red onion, chopped into 1" pieces
  • 1 jalapeno (add more if you like it spicy)
  • 1/2 cup fresh cilantro leaves
  • 1 Tablespoon fresh lemon juice
  • 1/2 tsp sea salt
  • 1/8 tsp fresh grated mixed peppercorns
  • 1/4 tsp fresh chopped garlic
  • a dash of cumin
  • 5 ripe Haas avocados
  • 1 lime

Instructions

  1. Place all ingredients except avocados and lime into a food processor; pulse 5 - 10 times until ingredients are finely chopped and combined.
  2. Add peeled chunks of avocado to food processor and pulse 5 -10 times until texture is to your liking.
  3. Scoop into a bowl and smooth guacamole out; squeeze half of a lime over the top.
  4. Cover with plastic wrap against the surface of the guacamole to prevent it from browning.
  5. Place in fridge overnight and enjoy any time in the next couple of days.
