Pancakes are the ultimate breakfast comfort food. These Berry and Granola Cakes are healthy, easy to make and delicious. By using a whole wheat pancake mix that is loaded with fiber and protein, you get a cake that is super easy to make and pretty darn nutritious too.
Especially this time of year, there aren’t too many folks looking for a tower of carbohydrates that they can smother in saturated fat and sugar.
But you can still have the warm and fluffy pancakes you love without the “I have lead in my stomach and need to take a nap” feeling you get after plowing through a stack of traditional buttermilk pancakes.
I make my cakes with Kodiak Cakes Flapjack mix . In a 4 pancake serving, there are only 260 calories, 14 grams of protein and 8 grams of fiber. Plus the bonus of 30% of your recommended amount of calcium. Impressive, right? I know! This mix also has built-in portion control. Since there’s no measuring out eggs, oil, or milk in fixed batch sizes, you can make as much or as little as you want. Equal parts mix and water will yield lovely cakes.
My favorite way to dress these guys up is with fresh berries and granola.
The berries are little pockets of warm sweetness, and the granola adds a touch of crunchy texture. I add a bit of butter and honey on the top of the stack and we are in business.
If I find myself without decent berries, I have used banana as a substitute.
Your pan will be a sticky mess from the banana carmelizing on it but the crunchy-sticky-sweet of browned banana slices in your cakes is definitely worth it. I will usually throw some banana slices on top too because they are an awesome flavor combination. And I love bananas. But I digress.
These pancakes are good with whatever you put in them and really are excellent without the extras too.
