Peanut Butter S’mores Dip

S’mores are as delicious as they are messy.  And my husband likes his s’mores with peanut butter smeared on one of the graham crackers. Now that is a mess.  peanut butter smores dip-1647 At his suggestion, I added peanut butter to a s’mores dip recipe that was glorious in its own right.  He simply cannot resist the combination of melty peanut butter with melty chocolate and toasted marshmallows.  So, I will now share with you the story of Mikey’s Beloved Peanut Butter S’mores Dip.

We had family in from out of town a couple of weekends ago, and I volunteered to do the dessert for our big dinner together. peanut butter smores dip-0371 Many of the relatives are health conscious and don’t often partake of dessert.  So, I knew I needed something that could be served in small portions and wasn’t a total nutritional disaster.  I also wanted that “WOW” factor.  How disappointing would it be to come out of dessert retirement for your food blogger sister-in-law’s dessert and then have it be – gasp! – mediocre?  Not on my watch, I tell you.

I did some searching on Pinterest and came across the recipe for   Cleverly Simple’s Smores Dip .  peanut butter smores dip-1456I put my oval cast iron baking dish, a giant package of Hershey bars, two bags of large marshmallows, and a box of graham crackers into one of my handy reusable grocery bags (which are most often used for cargo that is not actually groceries) and off to dinner we went.

As the table was being cleared after ourpeanut butter smores dip-1392 meal, I scurried into the kitchen with my 12-year-old daughter Alex in tow.
In five minutes, we had the dip assembled and into the oven.  I let it cool for a couple of minutes after its very brief cooking time, and then dessert was served.  And it was utterly divine!  As a side note, I will admit to coveting the fabulous cobalt blue silicone oven mits that I wore while serving the dip.

peanut butter smores dip-0414My husband loves peanut butter, and immediately upon tasting the dip, he said “this sure would be better with some peanut butter!”  So, a couple of nights later, I made it with peanut butter.  He absconded with the pan shortly after it came out of the oven, and advised me almost immediately that it was “awesome”.    At least I think that’s what he said … his mouth was pretty full.  I hope you enjoy it as much as he did!

Peanut Butter S’mores Dip

Ingredients

  • 4-6 Hershey bars (depending on pan size, layer the chocolate at least three pieces high)
  • 20-30 Jet Puffed marshmallows
  • 2-4 Tablespoons creamy peanut butter
  • Graham crackers for dipping

Instructions

  1. Preheat oven to 450 degrees
  2. Spray small baking dish with nonstick spray (not needed if you use cast iron)
  3. Break Hershey bars into rectangles and layer at least three pieces thick
  4. Drop a teaspoon of peanut butter on each of the chocolate pieces
  5. Pack the marshmallows into the dish on top of the chocolate and peanut butter
  6. Put it in the oven for about 5 minutes; let it go a minute or two longer if you like some seriously crispy marshmallows.
  7. Cool for a couple of minutes then serve with graham crackers.
