Peppermint Filled Brownie Bites

One of my most favorite candies ever is the York Peppermint Pattie. Really, how can you not love the rich chocolate flavor paired with a center filled with cool minty creaminess?  I set out to make brownies that gave you that rich chocolate and creamy minty flavor in every bite.

My first attempt was a pan of brownies with a layer of peppermint patties in the middle and the peppermint glaze from the Peppermint Glazed Chocolate Donuts on top.  While delicious,  you couldn’t be guaranteed a piece of peppermint pattie in every bite.  I know … I tried.  And by the way, this is the best kind of research to do.  Especially when it doesn’t work out quite right though it is still rather delicious…. pep brownie bites-17
pep brownie bites-0172So, I decided to try brownie bites since I had already made some for the S’mores Brownie bites.   The standard muffin pan size brownie bite was just too big and the ratio of chocolate to mint was backwards even though I could fit a whole peppermint pattie inside the muffin cup.

Onward to mini muffins.  This size was just right! pep brownie bites-0273I put a quarter of a peppermint pattie into each partially filled mini muffin tin.
When it baked, the peppermint patty created a small cavern into the middle of the brownie bite which acts as a receptacle for the glaze.  So not only do you have glaze on top, but you’ve got melty peppermint patty and more glaze in the middle.

A single box of brownie mix makes a lot of these little guys, and they go down pretty easy,  so if you feel the need to have them for breakfast you should know that  I highly recommend that selection ….  especially on a  Monday.

Peppermint Filled Brownie Bites

Peppermint Filled Brownie Bites

Love peppermint patties like I do? You should try them as brownies.... so easy and so delicious!

Ingredients

  • Box of your favorite brownie mix (I use Ghirardelli triple chocolate)
  • The necessary oil, water and eggs for your mix
  • 12 (ish) peppermint patties, unwrapped and cut into quarters
  • 1 1/3 c confectioners sugar
  • 2 T butter, melted
  • a pinch of salt
  • 2 teaspoons evaporated milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract
  • 1 tablespoon (more or less) hot water

Instructions

  1. Preheat oven to 350 degrees
  2. Grease mini muffin pan with softened butter for the easiest removal after baking.
  3. Prepare brownie mix per package directions.
  4. Fill each well on the muffin pan between 1/2 and 2/3 of the way full.
  5. Insert a quarter of a peppermint pattie (pointy side down) into the brownie bite batter.
  6. Bake at 350 degrees for approximately 14 minutes until edges are crisp.
  7. Cool in pan for 15 minutes; remove from pan and cool completely on a wire rack.
  8. Place sugar in small bowl; add all wet ingredients.
  9. Stir with small whisk or fork until smooth but thick.
  10. Using a teaspoon, pour a dollop of glaze onto the top of each brownie bite.
  11. Sprinkle with your choice of colored sugar or sprinkles right away before glaze hardens.
